Easy to make. 3 cups puffed rice 1/2 chopped dates (Amport brand is gf/cf, the chopped variety is coated with beet sugar only.) 1/3 firmly packed brown sugar 1/4 cup margarine 1/4 cup honey Grease 8 inch square baking pan. In large bowl, combine cereal and dates; set aside. In medium saucepan, combine sugar, margarine and honey. Bring mixture to a boil over medium heat, stirring occasionally until smooth. Pour over cereal mixture; mix until well coated. Press firmly into prepared pan. Chill; cut into bars. Store in Refridgerator. What I did was to add the dates to the liquid mixture and stir a few minutes before adding the cereal to the pan. Combine and stir well and then pat into pan like rice crispy treats. Making them this way allows the dates to sort of melt together a little bit. These are really good and easy. When I used to make date bars pre-diet days, with oatmeal, they were great to get the bowels moving (sorry). Not sure if these will do the same thing without the oats, guess we'll see tomorrow!
