Guest guest Posted August 4, 2000 Report Share Posted August 4, 2000 I cup raw rice 1 can (or 2 cups homemade) GFCF chicken brothe shredded zucchini ( as much as you want) Combine rice and broth in saucepan, bring to a boil, reduce heat to simmer. Cover. let simmer lightly for 20 minutes. Stir in shredded zucchini. put the lid back on. In 5 minutes, it will be ready to serve. Good as a side dish with plain chicken or fish.
