Cranberries contain significant amounts of pectin. How

do we prepare cranberries to get rid of the

pectin?

Well, if you hadn't sweetened them with honey or saccharin, I don't

wonder you about fell over! Cranberries by themselves are more than a

little TART.

ALL fruit skins contain a fair amount of pectin. That's why, at the

beginning of the diet, we peel (and seed) all fruits and vegetables, to

get rid of the pectin. Later, we may be able to tolerate the whole

fruits.

<g> You have that Omega juicer... put it to work, woman! Juice

those cranberries, get rid of the skins, sweeten it, add some gelatin,

toss it in a mold, and presto, delicious cranberry sauce!
