I think the starting URL is www.carbsmart.com then there's someplace to click for recipe exchange. BTW, for a holiday potluck I made the faux mashed potatos with cauliflower (folded in cooked mushrooms and a little cheddar cheese too) and they were a Big Success and everyone thought they were really potatoes! I had a wonderful pureéd parsnip/horseradich recipe over Thanksgiving that was as close to the real thing as imagineable. Guest guest Posted December 28, 2002 Report Share Posted December 28, 2002 Hi, Cheryl...it's very simple. Take a head of cauliflower...trim it...cut it into sort of equal pieces. Steam it (or nuke it if you want) till it's more than al dente but not totally soft and mushy. Break it up into the smallest pieces you can, conveniently then throw it into a food processer (hope you have one)....for one head of trimmed cauliflower I use about a quarter cup butter and a teaspoon of salt. Whip it until it looks like mashed potatoes. Then I store it in a Tupperware in the refrigerator and take out individual portions and nuke 'em. Sometimes I add previously cooked mushrooms and / or a slice of cheddar cheese before I nuke it. That's it! Depending on your e-mail/browser software, you should be able to just click on the link and then you will be taken to the appropriate web-page. If you see the link as blue and underlined, this should work. If not, double-check to make sure that the entire link is being copied.
