This is no help with bread, but I often will put cottage cheese or instant

oatmeal in a disposable cup to eat on my way to work. In both cases I

choose the thicker types so that I don't have food all down my front when I

arrive; sugar free yogurt cups are good too.

Thanks, unfortunatly my entire drive is 1 hour 15 mins of highway

driving at 4am. I'm not that dexterous at that hour :)

How about some yummy low carb peanut butter cookies that you can eat

on the way to work? I made these and baked only until inside was

still soft and loved 'em.

Any kind of bread raises by BG levels by more than I'm happy with. If

you're like me, I'd hate to start the day that way.

Here's the recipe:

1 Cup Peanut Butter

1 Cup Splenda (sugar replacement, drier, doesn't caramelise)

1 Egg

Bake at 375 degrees for about 10-12 minutes until outside is browned

but inside is still moist.
