Legal: dry marsala wine and tomato paste in a tube?

Hi,

I have questions about a couple of products that I can't find on the

BTVC website:

1) Is dry marsala wine legal for cooking in sauces and soups?

2) I understand that canned tomato paste is illegal, due to the high

probability of added starches. Does the same logic apply to tomato

paste in a tube?

Thanks,

Jill

Jill,

You have to verify the sugar content. I believe Marsala is a sweet

wine. Add a saccharine tablet to sugar free red wine for your recipes

or even some grape juice.

All commercial tomato paste is illegal as it may have undisclosed

sugar or starch.

I believe Marilyn can post a recipe for a homemade version.

Is there really such a thing as " dry " marsala wine? I thought by

definition it was a sweet wine. I'm confused about legal wines. I

thought anything from California was OK because they're not allowed to

add sugar. Are sweet wines illegal even if they're from California?
