Katy > _____________________________________________________________ Katy, We were at a pub and the menu listed shrimp crusted and deep fried with coconut. I decided I could make this at home. It was delicious and I used a mayo coating so the unsweetened coconut would adhere to the shrimp. I added a drizzle of honey when it was finished. At midnight I awoke with red flaming itchy knees, took compounded benadryl and used an anti itch cream. Then I turned on my computer and did some research discovering coconut can be cross reactive with latex allergy. Carol F.
