(I buy a "pure raw" local clover honey and I'm using the same brand so I assume it's the source of the pollen that changes with the season.)

Someone correct me if I'm wrong, but I don't think raw honey is legal. It needs to be pasteurized.

Elaine says in the book"Pasteurized is fine." I think yhe important hing is that it is filtered.
