I've been able to eat a spoonful of peanut butter nearly every day since month 2 on SCD. I live in the Southeast, so can find peanuts easily and cheaply in my local stores. I actually pass peanut fields every day on my way to and from work.... But I've also found some online sources that offer roasted-in-shell peanuts at a reasonable price (where I get my pecans and walnuts from). Anyway, I get peanuts in-shell, and usually try for roasted-in-shell because that saves me some time. I prefer to add my own salt, and it's safer in terms of SCD-legality as well, so I get the unsalted roasted in shell peanuts. I prefer the taste of roasted peanuts in my peanut butter, but have had to purchase raw peanuts a few times and then roasted the nuts after shelling and skinning them. All the shelled peanuts I've looked at have unidentified oils used (I suspect soybean oil, although I'd hope for peanut oil, but the companies I talked to won't commit) and often a powdery substance that might be just peanut residue, but I.m suspicious and don't want to risk it in case it's a cornstarch derivitive. Of course you have to spend some time shelling the peanuts; but I do this while watching a movie. I usually pull the skins off the peanuts as well because my digestion is cranky about the skins too. Easy to do; most of the skins fall off while shelling. Then I make peanut butter in my food processor ; a batch lasts several weeks for me, but I don't eat a whole lot. I haven't had any issues with mold. I shell them within a day or two of purchasing them and keep the peanut butter in the refrigerator. I check the peanuts carefully as I'm shelling them, and toss any that look suspiciously dark and damp. That hasn't happened too often in the 3 years I've been making my own peanut butter -- maybe twice?? Kim M. I thought therewas a mold issue but I can't seem to tolerate nuts right now. For somereason the peanut thing is confusing me.
