Guest guest Posted January 4, 2004 Report Share Posted January 4, 2004 When you boil the little red potatoes bring them to a rolling boil then pour off the first water and add fresh water and boil till done. I was raised in the country and was taught that this made them taste better and also may be raise the BG';s less??? I can eat a small amount of white potato and it doesn't bother me but sweet potatoes are my favorite. I never touch anything fried I cannot even think about it tasting good, but to each his own. Also Carrots are one thing that do raise my BG's so everyone is very different. I also keep 2 meters for when I question my main one (I have a cheap-o from Wal-Mart) they always check out within a few points of each other. But be sure to use the same stick for both. Helen H type 2 yum First... I have always had trouble with potatoes and had pretty much given up on being able to eat more than 2 bites of them without my bgs going sky high. I can eat a small sweet potato but not a white potato. So I had a friend who told me that red potatoes, especially the small " new " potatoes were less starchy and if I would get those and quarter them and boil them, a lot of the starch would boil out and after they get done, I pour all the water off and give them a spritz of " I Can't Believe It's Not Butter " spray and then add a little fat free buttermilk and mash them. I mash mine with the skins ON (but that's just my preference.) The buttermilk makes them taste like you have rich mashed potatoes with butter and sour cream in them... but they don't. And ya know what? I can eat 3 of these do GREAT! It doesn't affect my bgs! I'm not kidding... that was SO great. I served it with steam baby carrots and the mashed new potatoes.
