There's a restaurant here which has tofu burgers. You get the firm

tofu, cut it into about a 1/2 " thickness slab and put lots of

mustard/other seasoning salts. Add to it tomato slices, lettuce,

bean sprouts and bun. They serve side of corn chips and dill pickle

spears. If that restaurant wasn't downtown, I'd go tomorrow.

Excellent sandwich!

The great thing about tofu is that it tends to take the flavor of

whatever you cook it in. Cube it in spagetti sauce while simmering,

makes great spagetti, vegan alternative. Great source of protein. I

think the main drawback is that it does tend to be a little high in

fat, depending on the individual as to whether that's a concern.

Mike, I discovered this very simple and quick Tofu recipe/meal just since being

diagnosed this past October.

Tofu is kind of tasteless if eaten alone... I cut the Tofu into an approximate

serving size slice. I'd have to look at a Nutrition Label, but I

believe there are about 6 servings in a standard size package. I lightly butter

and pepper 2 slices of toasted 12 Grain (Multi-Grain)

bread. Then I either leave the Tofu in its rectangular slice, or I gently mash

it on the toast with a fork. It makes a healthy sandwich for

breakfast, lunch etc... I'm sure it would be very good using mustard, ketchup,

or whatever you prefer. Maybe top it with onions,

lettuce, tomatoes, or any additional ingredients of your choice. Since I'm

allowed up to 60 grams of carbohydrates per meal, I could

have up to 2 sandwiches per meal. If using a Multi-Grain bread, be sure to

check the carbs per slice, as some are higher than others.

I think Tofu is also used in salads and can be cooked for different recipes. I

bet if you search at Google, you'd find more ideas than

you need.

Note that the package states you are supposed to replace the water in the

container every day to help keep the Tofu fresh. Sometime

I skip doing it. If Tofu is something you like enough to eat often, you might

want to get a Rubbermaid or Tupperware container to use

for storage.........Deb

Lately I have been buying the " firm " style and cutting it into cubes,

marinate (I like making a marinade from olive oil, soy sauce, ginger,

garlic, salt and pepper) but you can also buy a marinade. There's

lot's to choose from at the supermarket. Anyhow, let it marinate for

a while, then put in a broiler pan and into your broiler. Check

periodically and stir, but I think it takes around 10-15 minutes.

Stir so all sides get evenly cooked and when the edges start looking

a little crispy, take it out. This is much healthier than stir frying

in oil.
