Now you can easily get a lower fat version. However, the typical is not really high in fat. Also, the fat is not saturated fat. Also with silken, to extra firm you can use it for sauses, smoothies to egg substitutes in " scrambles " to salads - really endless. Lately I have been buying the " firm " style and cutting it into cubes, marinate (I like making a marinade from olive oil, soy sauce, ginger, garlic, salt and pepper) but you can also buy a marinade. There's lot's to choose from at the supermarket. Anyhow, let it marinate for a while, then put in a broiler pan and into your broiler. Check periodically and stir, but I think it takes around 10-15 minutes. Stir so all sides get evenly cooked and when the edges start looking a little crispy, take it out. This is much healthier than stir frying in oil.
