Here is a recipe. You need to choose the veggies that you can eat. Some people can eat the white and or sweet potatoes, others cannot. For someone that cannot have the salt, you could use other seasonings. Zucchini is not one of the veggies in this recipe, but I would think it would work okay. Baked Vegetable Chips 2 - 3 lbs (900 - 1350 g) assorted root vegetables, such as sweet potatoes, russet potatoes, large carrots, daikon radishes, turnips, parsnips, rutabagas (Swedes), or beets, peeled and sliced as thinly as possible Salt Cooking spray Sprinkle the vegetables lightly but evenly with salt and allow to stand at room temperature for 30 minutes. Rinse in cold water and dry completely with paper towels. Spray a baking sheet lightly with the cooking spray and arrange the sliced vegetables in a single layer on the sheet. Spray the vegetables lightly with cooking spray and bake in a preheated 275 (130C) oven for 40 to 60 minutes. Check the vegetables frequently and remove them as they are dry. They will become more crisp as they cool. Season with salt and store in an airtight container for up to two weeks. Makes about 4 to 6 cups (1 - 1.5 L), to serve 4 to 6. Also, if you have something healthier prepared in advance it can keep you from eating less healthy choices. www.atkinscenter.com and click on recipes. There are some really good lowcarb recipes there. I make hubby the pumpkin cheesecake, but I add a few drops of stevia. It's not quite sweet enough per recipe. I also like some of the chocolate stuff. Unsweetened chocolate with artificial sweetener added can make a delicious snack without driving up the carbs. However, these tend to be higher in fat, which may or may not be an option for you. Some nights I was climbing into bed at 9:00 pm, when my regular bedtime was at midnight. But now that I have been following my " new routine " for over a year (since November 02) I have found that my desire to munch has declined, and I guess my body has gradually adjusted to fewer calories and lower sugar levels, and I no longer feel as hungry.
