I met with the dietician last week who went thru the meal planner with me. I understand how it works and how to manipulate it just fine. What I cannot figure out is how to manipulate a recipe and make it fit the ratio/calories etc...that is required. I printed out all the recipes from the files on the ketogenic group site and there's some I know my daughter would like but by the time I mess around with the grams and get it to the right ratio it doesn't seem appetizing at all!!! Either I have to reduce the meat so much or increase the fat (mayo or butter) so high that it'd be just gross. I think most of the recipes are for 4:1 ratio and we will be starting at a 2:1 for a few days. Does anyone have any good hints at how to work these numbers? I also need some carb food that are just mostly pure carbs and won't throw off the proteins and fats in the recipes. Any ideas? There are some grains in the food list with the meal planner but most supply protein and fat too which screws with the basic meal. She pretty much eats the same six meals over and over (I make minor changes in what veggies I use without recalculating sometimes). If you want them, let me know. To deal with all the fat, I give Leo an approximately 40 gram shake made out of cream(or whipped cream) with cocoa, stevia and a little vanilla or mint, and usually " bury " about 10 grams of oil in the shake, which I then freeze until its the consistency of soft ice cream. That packs in a lot of the fat and makes the rest of the meal less oily. He doesn't eat mayonnaise so I don't have the luxury of getting the fat in that way. One of the meals he likes best is scrambled eggs made with a little cream, fried in browned butter, with tomatoes, stravberries, bacon and a chocolate shake. My recipes are a bit of a hodge podge now because I've been fooling around with his calories (trying to reduce them) but they should at least give you some ideas. It does seems gross, I know. But they adjust. You just have to discover the way they can best tolerate the fat -- as butter, cream, oil, or whatever. Later you can adjust. We also make Hebrew National hotdogs which pack in a lot of fat. Then I can mix some ketchup with mayo, which on occasion, he will eat. Don't worry. It will come. Guest guest Posted July 18, 2002 Report Share Posted July 18, 2002 -- the meal planner is an excel program you can download from the web (stanford meal planner -- I thinkthe ketogenic web site gives you the address) to help you figure out your meals. Its easy to use and I can't imagine doing the diet without it. You just plug in your ratio, calories, proteins, and it helps you figure out how many grams of everything you can include.
