If you freeze the plain fruit (no treatment), it suffers significantly in

the freezing (gets dried out, freezer burned, yucky, IMO) . . . but if you

cook it into sauce (even with Splenda), it then freezes beautifully!

Rhubarb is one of the things I gave up altogether as a diabetic because of

the sugar needed to make it palatable but Splenda cured that!)

I just did this. Cooked it without sugar. Just added water.

Freezes wonderfully!
