Guest guest Posted July 18, 2004 Report Share Posted July 18, 2004 Today for lunch I had a big fresh veggie salad with low fat mozzarella cheese on top and salsa chicken. This chicken is SO good and I make up a lot of it and then freeze it in portions. Just take 6 or 8 boneless chicken breasts and put them in a crockpot. Pour 3 cups salsa over the top and let it cook for several hours... until the chicken just falls apart because it's so tender. Then when you are ready to eat, take the chicken out and put it on a plate and add 1/2 cup ff or lowfat sour cream to the salsa and stir. Pour this over the chicken and serve. It's really good served over rice but I like it by itself. Oh yeah, the best kind of salsa for it, in my opinion, is the garlic-lime salsa you get at Walmart. It's the Walmart brand. Yum! If you haven't noticed, I am the make ahead and freeze queen. It has done WONDERS for keeping me on my food plan. I sat down a while back and I knew that I could GO on a diet but eventually I always went off. So I tried to find out the reasons WHY I always went off and one is I hate to cut up, dice, chop, cook all the healthy stuff every day that I need. It is TOO hard to do and eventually I get tired of doing it and then the Pizza Hut guy is showing up at my door. So I make things easy in advance and have nothing in my house but what is on my food plan. So in the middle of the night if I have to have something to eat, what I really want, will not be there. That saves me a LOT of the time. I usually take one day every 2 or 3 weeks or so and make up a ton of stuff that day. Then I have it done. Right now in my freezer I have 8 lean steakburgers, 1 steak, 4 pieces of chicken breast and a pork chop that have all been grilled outside and frozen. I just stick them in the microwave when I want one. Then I have several kinds of homemade soups made and already premeasured and in bowls. I have lasagna made up and veggie casserole and now my low fat mac n cheese with 100% whole wheat noodles. Anyway, it works for me. I also keep Boca burgers and Banquet FF chicken breast patties in there for quickie meats that cook in the microwave. And Lean Cuisine dinners and pizzas... and homemade bran muffins. So anyway, enough about my freezer. I just wanted to pass that along because used to I would drive home from church on Sunday at 1:00 and be starving and 9 times out of 10 I would not make it past Burger King because I knew there was nothing at home that would not take a lot of work to fix... so I gave up before I started. Today I was VERY hungry but was excited to come home and stick my salsa chicken in the microwave for 4 minutes while I got some (already made up) salad in a bowl and sprinkled some cheese on it. If that helps somebody else who has this problem good... I wish someone would have given me this idea a long time ago.
