I've fixed zucchini every way possible now... but I have one recipe that I think I love the best. I thought I'd share it with you. Spray a pie pan with PAM Chop up one cup of zucchini, one cup of onion and put in the pie pan. Slice a large tomato and layer it over the top. Sprinkle 1/3 cup of fresh Parmesan cheese on top of veggies. Then mix: 1 cup skim milk 1/2 cup reduced fat Bisquick 1/2 cup Eggbeaters salt. pepper and garlic powder Pour this over the veggie mixture. Bake on 400 for 35 minutes. It is absolutley GREAT! It makes its own crust on top and bottom, and is like a cheesy, vegetable quiche in the middle. My blood sugar is GREAT 2 hours after eating this. 1 Serving: Calories 105 Fat 3g Sodium 460mg Carbohydrate 13g This is based on one pie serving 12.
