I'm on about 2200 calories per day.. for my goal weight... I break it down into five to seven meals per day... if the meals are lower cal stuff I end up with 7.. if they are a bit higher calorie then it's five.

I don't have an exact menu.. that gets too complicated for me.... What I cook depends on what I have to cook with and my level of imagination for the day.

Meats are mostly Turkey burger and when I can get it on sale, chicken and pork.. sometimes beef.

I buy rice in bulk and eat a lot of it.

I make my own pasta with milk and eggs, and with herbs mixed in with the dough

I make my own breads and buns, using eggs and powdered milk to boost the protein content.

I bake all my own sweets.

Gravies are made from scratch using pan drippings. I also make white sauces and cheese sauces. I cook down meat and poultry bones for concentrated broth and freeze that in muffin tins and use that to season rice, pasta and as a starter for soups and gravies.

Vegies are mostly frozen, so I can easily grab portions with no waste.

Fruits are a treat (due to finances)

I broke it down into something that is simple for me and fits my budget.

2 to 4 oz of meat (higher calorie/lower weight, lower calorie/higher weight)

2/3 cup starch (rice, potato, home made pasta, home made bread)

1/3 cup vegie

1/3 cup gravy or sauce if I want.

If I have fruit I use it as a mini-meal substitute.

If I have a treat, like cake or whatever. I use it as a mini meal substitute with the meals before and after the treat being higher protein to compensate.

I tend to cook in batches and freeze in the right portions. So I can grab a portion of roast meat and a mini bun and add some frozen vegies, for example, and have a quick and ready to go meal that doesn't leave me tempted to take more.

I use tupperware type containers and set up my meals, usually, for two days at a time. And always make sure that I have the first meal ready for the next day....

At meal time I can literally go to the fridge and grab my next meal. No fuss, no muss, no procrastinating cause I have to cook something first.

Eating every three hours means that you can eat a LOT less at one time and not feel as though you are starving to death... cause it's only a 'couple of hours' (three actually) and you can eat again, guilt free.

I had thanksgiving alone this year and it would be really really easy to just oink... right? Well. I was a good girl. I set up my containers and had 7 Thanksgiving dinners on THE day and 7 more the next day...Yes, I went a bit over in calories.. but I was in turkey dinner bliss for two days and still stayed under the number of calories that would have had me adding weight.

I'll be doing that again with my turkey for Xmas....

If I don't set up my meals and have to cook as I go... it's too hard to stick to the schedule... I don't want to stop what I'm doing to go cook.. so I'll wait to long and get really hungry.. then I HAVE to cook then I over eat.

So... this afternoon I'm cooking up the food that will feed me Tuesday and Wednesday. Wednesday afternoon I'll cook food for my meals on Thursday and Friday... My turkey will be roasted on Friday and I'll set up my turkey dinners for Saturday and Sunday.

That might give you some ideas for how you can set up for yourself.

I have some tricks for storing stuff in portion sizes.... I can run through that again for new folks that are looking for ideas....

I'm making Turkey Burger Salisbury Steaks today.. I like them.... I use oatmeal in them for the filler/extender, egg as the binder. The batch happens to make 15 meals. Some will be set up with rice some with potatoes. Some will have butter, or cheese or gravy. I'll have different vegies in the meals..I end up with variations that way to keep from getting bored. It works for me.

I'll also make cheese omelets. for example. A huge yummy four egg cheese omelet...then I'll quarter it. Which just happens to fit perfectly in my mini-meal containers. and I get this big thick fluffy omelet (that I've never been able to do with just a single egg in a little pan) That I get big fork full bites out of... but still ends up being about 300 calories...

Once your stomach and mind get accustomed to smaller meals at regular times.. you don't get hungry and over eat all the time. But do what I've been doing since thanksgiving, and not take the time to do it right... keep skipping and then over eating... and you gain weight as I have these last weeks.

A last note... if you are making a favorite meal and fear that you won't want a mini-meal portion, that you'll be tempted to over eat... just remember.. you get to have seconds in a 'couple of hours' - guilt free. hehehehehe

Sorry for this OT posting everyone... Carol is my ride fairy...

she'll be getting me in for my labs and she's having trouble with her

puter and I've been getting odd emails from her with no confirmations

on our little trip....

After a bit over two and a half years of self medicating I finally

get to see my numbers and just how well I've been doing with self

monitoring. I suspect I still need adjusting.. but I'm soooo close

that I want to see numbers before I make anymore changes.. I will be

posting results here...

Carol... yes, I still have both your Cell phone and home phone

numbers. You're home on Friday, right?

Write down the 7 digits of your home phone number and subtract this

number from it 1119290060 and you will have my pager number... so

you can give me a page when you have time... I'll have access to the

phone during the day on Friday.... (We have one phone line, three

adults and two internet computers here, for those that aren't

aware.... and we share phone time! hehehehe)

We can catch up on our gossip and set up a game plan for our trip.

After the labs, if I'm mentally capable (12 hours of fasting and no

meds I may be a basket case) I can take a peek at your puter and see

if I can get it working right again, if you'd like....

Sorry again everyone!

Okay got the number, I'll call Friday for sure but I'll try for

earlier than that. Feel free to call my cell Thursday afternoon.

In the evening I get to meet with the tax people...yipee.

Feel free to make the appt without talking to me. If you can get in

even this Friday yay for you right? All my mornings are pretty

open. I have a 10am appt on the 25th, but we could still get to the

lab, we'd just have less time for other stuff. Hate to waste time

on a stupid computer! :)

Later,

Carol

, Have you had your blood glucose checked lately? I know it was high

back in Feb. and since I had a similar issue I thought I would chime in on

this. I kept thinking my blood sugar was low because I was crashing a lot.

Come to find out my Hemoglobin A1C was at 6, which the range they want it is

below 6. So in essence I was borderline. The HA1C is a test that can be

done to find out what your average blood glucose was over a period of time

(I think like 6 weeks). You can actually buy a test kit at the pharmacy and

test it yourself, which would be cheaper in the long run if you did not have

insurance. Even though I got my HA1C down to 5.7 the new doctor put me on

Metaforin and it is really helping a lot. The HA1C was done for me because

the lab screwed up my 3 hour IGTT (Insulin and Glucose Tolerance test) The

lab said they would do the test again for free but the lab costs me nothing

with insurance. I just laughed because it is a horrible test and I did not

want to go through it again. I cannot say this is the final thing that is

helping and that I do not have farther to go but it does help. I am also on

Cortef, Methylphenid, Armour, Estrodial, Progesterone, Testosterone, and

tons of supplements.

If there is any way to increase your protein intake and lesson your carbs

that would be good. Did you ever get the brown rice we talked about? I

know the oatmeal is cheap but it is not that great for someone with blood

sugar issues. Granted the blood sugar issues could be caused or a symptom

of the thyroid and adrenal issues.

If you have questions directly for me could you send it to me via email?

You can post to the group too but I use digest version and sometimes by the

time I get to the end of all the digest I forget to answer. Take care.
