From: recipe: light meals international recipe: pear and watercress salad Prep Time | 15 min Cook Time | 20 min Level of Difficulty | Easy light meals | This fruity salad, courtesy of the Weight Watchers U.K. Web site, makes a tasty light lunch. Ingredients 1/4 cup(s) uncooked brown rice, long-grain1 tsp table salt 3/4 cup(s) 1% low-fat cottage cheese 1/8 tsp cayenne pepper1 2/3 cup(s) unsweetened canned pears, drained and chopped2 bunch(es) watercress, trimmed4 tbsp fat-free salad dressing, except Italian, French recommended Instructions Cook rice according to package directions with salt but without added fat; allow to cool.Mix together cottage cheese, cayenne and pears; stir into rice.Arrange watercress on a serving dish and place pear mixture in center; chill for 15 minutes before serving with dressing.
