I'm sure I was meant to be a rabbit - I just LOVE salad greens Then there are spinach - steamed with a bit of lemon jice and nutmeg Sauerkraut with caraway seeds Wonderful sweet cherry tomatoes Mushrooms. Button mushrooms cut in half and cooked in a HOT pan with the tiniest bit of olive oil until the mushrooms start to 'sqeuak' in the pan. Add a dessertspoon of water. It will imediately steam and the mushrooms will relaesae their own juices. Add a liitle bit of french mustard to the liquid then cook until the liquid is evaporated. You have a pan full of lightly mustartd flavoured mushrooms. Add a little freshly ground black pepper and some skim milk yoghurt and - bingo - a [erfect light meal.
