2 egg whites1/2 teaspoon cream of tartar1/2 teaspoon vanilla extract1 pinch salt3/4 cup splenda -- granular1 cup mini morsels1/2 teaspoon peppermint extract4 drops green food coloring

1 Preheat oven to 350 degrees F (180 degrees C).2 Beat egg whites until glossy. Add cream of tartar, vanilla, salt, mint extract and few drops of food coloring. Add granular splenda and beat until stiff. Fold in chocolate chips.3 Line cookie sheets with foil. Grease with oil. Drop by teaspoonfuls onto foil. Put cookie sheets in oven and TURN OFF OVEN. Leave in oven overnight.

Chocolate Chip Meringue

3 egg whites1 cup splenda -- granular1/2 teaspoon distilled vinegar1/2 teaspoon vanilla extract1 pinch salt1 cup mini morsels

1 Preheat oven to 300 degrees F (150 degrees C). Grease baking sheets or line them with parchment paper.2 In a medium bowl, whip egg whites to soft peaks. Gradually add the splenda, vinegar and vanilla while whipping to stiff peaks. Fold in chocolate chips. Drop by spoonfuls onto the prepared cookie sheets.3 Bake for 20 to 25 minutes in the preheated oven, until cookies are dry.

Chocolate Chip Meringue Drops

2 egg whites1/2 cup splenda -- granular1 teaspoon vanilla extract3 tablespoons unsweetened cocoa powder1/2 cup mini morsels

1 Preheat oven to 250 degrees F (120 degrees C). Line 2 baking sheets with aluminum foil or parchment paper, and set aside.2 In large metal or glass bowl, beat the egg whites on high speed with an electric mixer until soft peaks form. Gradually add splenda while continuing to beat until they hold stiff peaks. Mix in the vanilla and cocoa on low speed, then fold in chocolate chips by hand. Drop small mounds of the mixture onto the prepared baking sheets, spacing 1 inch apart.3 Bake for 1 hour in the preheated oven. Turn off oven, and leave the cookies in the oven for 2 more hours, or until centers are dry. Remove from pan and store in an airtight container.

3 egg whites1 cup splenda -- granular1/2 teaspoon cream of tartar1 teaspoon cinnamon1 cup cinnamon chips1 pinch salt

1 Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet. 2 Beat egg whites until fluffy. Add salt and cream of tartar. Adding splenda gradually, continue to beat until egg whites are stiff and will stand. Fold in cinnamon and cinnamon chips.3 Drop by teaspoonfuls onto greased cookie sheet, put in oven and turn oven OFF. Leave in oven undisturbed overnight. Do not open oven once cookies have been put in or they will be soggy, not crisp and airy.

Coconut Meringues

2 egg whites1/8 teaspoon cream of tartar3/4 cup powdered sugar1/4 cup coconut flakes1/4 teaspoon almond extract

1 Preheat oven to 250 degrees F (120 degrees C).2 In small bowl with mixer at high speed, beat egg whites and cream of tartar until soft peaks form. Beating at high speed, gradually sprinkle in sugar, 2 Tablespoons at a time, beating until sugar is completely dissolved. (Whites should stand in stiff glossy peaks.) With rubber spatula, fold in coconut and extract until mixed.3 Drop mixture by rounded teaspoonfuls onto large cookie sheet, about 1 inch apart.4 Bake 1 hour or until dry. Remove to rack to cool.

Add vanilla (or any flavoring) and any coloring, if desired. Add chocolate chips, nuts or raisins if desired.5 Drop on greased sheet. Place in preheated oven and turn heat off. Leave for 4-6 hours or over night. Do not double recipe as oven will not hold the cookies.
