Hi, Sara.

Coincidentally, just yesterday I used a modified version of " Sneaky

Veggie Pancakes " (by Angie), which I must have found on either the

pecanbread or scd recipe website:

4 eggs

1 c squash (or any other pureed vegetable)

1 t cinnamon

1 t vanilla

1 T melted coconut oil

Mix all ingredients well and prepare as pancakes.

________________________________________________________

I used a mixture of vegetables (predominantly butternut squash), skipped

the cinnamon, and added some cooked (boiled) ground turkey. I put

everything into the blender and then made waffles with the smooth

poultry-concealing mixture.

Sara,

The Sneaky Veggie pancakes are made out of butternut squash.

Sorry for the confusion.

You might also check out the chicken pancakes and chicken

cupcakes. Neither of these contain nut flour/butter and would be

suitable for the beginning of the diet.
