Coincidentally, just yesterday I used a modified version of " Sneaky Veggie Pancakes " (by Angie), which I must have found on either the pecanbread or scd recipe website: 4 eggs 1 c squash (or any other pureed vegetable) 1 t cinnamon 1 t vanilla 1 T melted coconut oil Mix all ingredients well and prepare as pancakes. ________________________________________________________ I used a mixture of vegetables (predominantly butternut squash), skipped the cinnamon, and added some cooked (boiled) ground turkey. I put everything into the blender and then made waffles with the smooth poultry-concealing mixture. Good luck!! You might also check out the chicken pancakes and chicken cupcakes. Neither of these contain nut flour/butter and would be suitable for the beginning of the diet.
