If my child will eat the runny goat yogurt without my dripping it,

do I need to drip it? Is dripping beneficial? Is the liquid whey

harmful?

Thanks in advance.

Sally,

No dripping required. Let the completed yogurt set for eight hours in the fridge

to firm up somewhat. Goat yogurt doesn't thicken as much as that from cow's

milk. Dripping it is useful for a spreadable product or to use in a frosting or

dip.

Drip Tip: One of those old Melitta ceramic coffee filters lined with a paper

filter is ideal for making dripped yogurt.

The only thing I'd say about this is that if you are seeing some

negatives that worry you, then maybe try the dripped version and see

what happens. The liquid is not harmful, but it may contain some

left-over lactose - so if you child doesn't respond so well to the

undripped yogurt, I'd try the dripped to see if there is a

difference.
