I can't see why you couldn't use some mozarella instead of the blue cheese. I think my family would prefer mozarella instead...but not me..I love blue cheese...So I figured I'd make the Buffalo Lasagna.. and then crumble some blue over the part I want..have to count the extra points... Actually, too you could use cottage cheese in place of the ricotta....it actually will give you a creamier consistancy... With Buffalo Wings..the blue cheese actually goes with the celery sticks...And I guess the preference cheese of the folks who started Buffalo Wings in a resturant in Buffalo, NY...Hopes this helps..and it will be nice to see and share others answers..Sherrie E.
