Hi Jen,

Welcome!!!! I think you kid eats a lot of the foods in the into

(except for meat) but the sneaky pancakes may be just want you need!!

The answers to most of your questions are in www.pecanbread.com!!!!

Take a look there. You will find info about the probiotics, the

introduction diet, including samples of what to cook, and a TON OF

RECIPES, a lot of eggless goodies. There are a couple of links to

other recipe sites (SCD Diet and SCD Recipes). Those, along with the

BTVC are where I get most of my cooking ideas at this time.

About the first signs of the diet working... I saw my son's stomach

reduce in about 1 week... I guess he was so full of gas and junk!!!!

He lost 5 pounds in the first 3 weeks (he is too heavy for his

height), and his stools are getting better (he is constipated)

Your approach to " getting him slowly into the diet " is a good one. My

son was addicted to crackers, pretzels and chicken nuggets... When we

switched to CFGF he ate a lot of rice and potatoes, chips, and he was

addicted to PB sandwiches. So I weaned him off slowly of starchy

foods until one day I said, " sorry I don't have bread, let's

eat .... " I am doing the diet with him and it seems to help him that

I am also eating without bread... We did the introduction diet for

about 2 days, and the third he actually ate green beans, which he

used to hate!!!!! Then I told myself that this was going to work!!!!!

Jen,

My son was GFCFSF for 1 1/2 years and GF with enzymes for 6 months

before switching to SCD. The diet really helped him in the areas of

eye contact, self-abuse, brain fog and feces smearing. He did not

start making gains in the areas of imitation, pretend play and speech

until enzymes were introduced. No matter how much I tweeked his diet

however, he had never had a solid stool. He saw a GI doctor

regularly for about a year having numerous tests done including a

colonoscopy until he threw his hands up and gave up. Within a week

of SCD he had his first solid stool. After a few weeks, diarhea

became a thing of the past. I also have a younger celiac only son

who started SCD at the same time and his stools followed the same

pattern.

Our whole family switched to SCD on Dec 1st of last year. Like you,

I chose a day and planned for a while. I understood that the purpose

for the intro diet was to start with a clean slate. I went in with

an attitude that it was better for my son to fast than to have the

wrong foods. The reason I was not too worried about him fasting is

because he had to fast before his colonoscopy and I saw how much more

clear-headed he was. Thankfully he did eat some food during the

intro but not much. We did the intro for 2 days with the only change

of adding spotted bananas on day 2 with Elaine's blessing.

Here is something interesting. While preparing for the diet, I

purchased some SCD legal cookies from Digestive Wellness. When they

arrived, before starting the diet, I gave everyone in the family

one. My 10 year old NT daughter spit hers out while the rest of us

choked it down. After doing the intro I brought the same package out

again. Everybody loved them - my daughter actually begged for more.

What I am saying is when the bad carbs are out of the system, the

taste buds seem to change to where healthy food tastes better. I say

this because some people try recipes on their child before switching

diets, find their child doesn't like the food and get discouraged. I

have been amazed at how everyone in our family has expanded their

diet when it comes to veggies. My autistic son that would not eat

any veggies (except potato) now eats broccoli, carrots, zucchini and

peas.

As for favorite recipes, check out the recipe section at

www.pecanbread.com. The chicken pancake recipe is there. My kids

love the peanut butter cake. I make it as cupcakes because it cooks

through better and easy to send to school as a snack. I have posted

some of my family favorites there such as Turkey Meatloaf and Zuchini

Omelett. I came up with a waffle recipe my family likes which is not

on the website:

BANANA WAFFLES

2 mashed bananas

8 eggs

1/4 cup honey

2 tsp. vanilla

1 tsp. salt

1/2 teaspoon baking soda

2 cups almond flour

Beat eggs and mix in banana. Add honey & vanilla and beat until

smooth. Add salt, baking soda and almond flour and mix well. Cook

according to waffle iron directions. Feeds about 6. Freeze or put

any extras in the fridge and toast to serve later.

For syrup I melt butter and add honey and vanilla. Try topping them

with banana or strawberry slices, chopped walnuts or pecans for a

little variety.

During the intro, my son basically ate carrots (out of the soup),

eggs and a little gelatin. As I mentioned before, he ate bananas

also on day 2. If you look at the Food Preparation section of

www.pecanbread.com, you will find some creative ways to expand the

foods in the intro diet.

I would also recommend eventually getting Lucy's Kitchen cookbook.

My family really likes the Cinnamon Cookie recipe and I have found

the Thousand Island recipe has gotten my whole family to like not

only salads, but to snack on veggies (carrots, cucumber, celery etc)

with dip for a snack.

My daughter ate mostly bread and cream cheese sandwiches, pudding,

bananas, apples, grape juice, fries, chips -- all before SCD. We

never did the intro diet, though I wish we had.

Again, we didn't do the intro diet because a) I didn't know how

important it was and B) I was scared enough without worrying about

Princess Picky starving to death!

Did you just offer the food at every meal until your child took a

We are unusual, but it took me 10 MONTHS to get to eat

vegetables. Now she eats a small serving at dinner every night, but

we still have to coax her.

You'd need to list the ingredients for us to tell you if that brand

of probiotic is legal.

The first signs that I saw were increased language and sociability.

It has been a slow journey, and my daughter still has a severe

language delay. Nobody thinks she's " autistic " , though. I did not

give myself a time limit, because she just started getting better

and better, and then I knew that SCD was working for her.

I can't do much there. The only 2 " recipes " that we use regularly

are the banana muffins from scdrecipe.com and the meringue cookies

from the same site. Other than that, likes her food " plain " --

e.g. roast beef, roast chicken, grilled meat -- so that's easy for

me.

My son does not really like meat, but he knows he must eat some. We

tell him to eat at least a certain amount and then he gets his

yoghurt.

2 to 3 days

No, I figured I had to make things as comfortable as possible for him

and gave food all day long. He ate huge amounts, not an uncommon

phenomenon.

For us it was an immediate change in stool: firm and dark and regular

smell.

3 months at least.

Omelettes, peanutbutter caramels, easter eggs, nut yoghurt, nut milk

and the Classic Lois Lang Luscious Bread.

The intro diet is usually 2-5 days. 2 -3 days for those with constipation

problems and 3-5 days for those with diarrhea issues. (But if you can only do

two days that is still great.)

*For probiotics, we use Ther-biotic by labs, are these safe?

The Ther-biotics all seem to have more than the strains of bacteria that Elaine

recommends. I believe that most on this list who use a probiotic use Custom

Probiotic . *Only the Lactobacillus acidophilus* Please see

I saw immediate results (within hours) and within a day or so my kids & DH

responded to the diet. For some it takes longer and the changes are quite

subtle. Elaine recommends giving yourself about a month on the diet to

determine if it's working for you.

My hands down favourite is the peanut butter cake recipe on

http://pecanbread.com/recipes.html

I have adapted it in so many ways. I made it in three layers, topped it with

strawberries, made it into cupcakes, added raisins and dropped as soft cookies,

added peanut butter caramel chunks to make a ch**late chip cookie knock-off etc.

Other than that I mostly adapt preSCD recipes. Tho', Lucy's cookbook has some

great ones also - Pizza casserole, Italian sausage, cinnamon cookies. I better

stop, I am getting hungry ;)
