Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 Hi all, Even though we've been on the SCD since last June, I've never made an SCD cake before. My 8 year old son's birthday party is tomorrow. I was thinking of making him a peanut butter cake, as he loves peanut butter. I read somewhere that a good frosting could be made with nut butter and honey, stirred until creamy, so I tried that this morning using peanut butter and honey. Maybe I used too much honey, but the flavor was so strong, I could hardly eat it. (This was straight though. I didn't have it on a cake.) My son happens to like strong flavors, but I'm not so sure his friends will!! Also I wonder if peanut butter frosting on top of peanut butter cake would be too much peanut butter flavor anyway! Any ideas? He can't have ANY dairy, including butter, due to severe allergies. We do have some thick SCD almond yogurt on hand... I wonder if that would that be good mixed with some peanut butter and honey? (He doesn't like the yogurt well enough to eat it without mixing it with something yummy.) He also loves strawberries, but I'm not sure how that would be on a peanut butter cake either. Is there something I could due with apples or bananas? Mashed bananas, a little yogurt, and honey, creamed well? But would the bananas turn yucky looking before the party? And would the frosting slip right off the cake? Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 I just made the peanut butter birthday cake as a 3 layer cake for my daughter's birthday party & frosted it between layers and all over with the honey frosting from BTVC. It tastes very much like a marshmallow frosting and is really good. Incidentally, though I don't know that your son would appreciate a pink cake, I was able to sucessfully tint the white frosting a fabulous pink color using a combo of beet and pineapple juice (the pineapple was to mask any beet taste that might happen to come through). Stuck a pink bow on the top and it looked fabulous. And yes, Jody, I took some pictures that I'll email to you! Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 You can make the frosting that is found with the cake recipe on pecanbread.com. I know it calls for butter, but you can use coconut oil instead. Use about 1/2 of the called for amount. The peanut butter really masks the flavor of the oil so you can't taste it at all and it gives it that spreadable texture that butter gives. In case you have never purchased coconut oil, it is a semi-solid at room temp that looks very similar to a coarse textured shortening. It is white and it comes in a jar similar to a small jar of mayonnaise. Just be sure to ask for food grade (some places sell it for skin use). I have made it with the coconut oil several times and everyone likes it (even people not on SCD).
