From: recipe: breakfast texas-style casserole Prep Time | 17 min Cook Time | 45 min Level of Difficulty | Easy breakfast | We help you serve brunch in a snap with this corner-cutting casserole, which uses frozen staples like potatoes and mixed vegetables. Ingredients 2 cup(s) frozen hash brown potatoes2 cup(s) Green Giant southwestern style corn and roasted peppers, frozen, thawed (or similar product with corn, peppers and onions)8 oz Louis Rich turkey polska kielbasa, or similar product, diced1 cup(s) fat-free (skim) milk 1/2 cup(s) fat-free egg substitute 1/4 tsp table salt 1/4 tsp black pepper 3/4 cup(s) low-fat shredded cheddar cheese, sharp Instructions Preheat oven to 350°F. Coat a 9-inch square glass baking dish with cooking spray.Place potatoes and then remaining vegetables in the baking dish; top with kielbasa.Beat together milk, egg substitute, salt and pepper. Pour over kielbasa; sprinkle with cheese.Bake until casserole is hot and cheese is browned, about 45 minutes. Cut into 6 pieces and serve.
