The coconut-carrot recipe (cake is delicious - we eat it out of the

pan lol) I think I may have printed it out from SCD Diet or SCD

Recipes.

First time I used a blunt cake mold. Yesterday I used the regular

round molds. It stuck both times!!

Okay.

Here's the trick. Line the bottom of the cake pan with wax paper.

After it is done, carefully use a knife or spatula to ease the cake

away from the edge of the pan. It should lift right out after that.

Once it has cooled slightly, VERY carefully pull the wax paper off

the bottom. If you get in a hurry the cake will tear.

This is how my mom made cakes back in the days before

" non-stick pans " were around...LOL.

For the bundt pan you can do the same, but it will take a bit more

fancy cutting. Trace the bottom of the pan and cut it out.

Even better than the wax paper is parchment paper. It is my secret

baking weapon. ;) I use wax paper for some items but for stickier

foods I always go for the parchment paper and it hasn't failed yet.

You might let the cake come to room temperature first also - cool it

on a rack before trying to remove it from the pan.

The best breadpan I have is rather small: 3 inches by about 8 inches.

It has a teflon/Tefal coating.

Ok, I am " Feingold frantic " here... What type of chemicals are there

in the Parchment or Wax paper? Would it contaminate the top layer??

If a little piece of paper stays on the cake, would it be " ilegal " to

eat it?
