This peanut butter cake discussion has reminded me that 's birthday is

coming up in June, God help us, time is flying too fast! I just realized that

once I get home from Chicago I'll only have 10 days till her party, heaven's

sakes!! Well, not to worry... whew!! So much going on right now it's nuts.

POINT IS - I want to make a cake that the adults will all enjoy too but that is

SCD legal. I'm not even going to worry about salicylates because Luke won't

touch cake, he only wants icing. The " icing " is going to be the dripped yogurt

cheese ( " cream cheese " as I call it) with pineapple juice and a little

saccharin, the same recipe I use to make his popsicles now. It has a sweet

flavor and is GOOD, I think, without using honey. So he can have icing which is

all he'll want... now for the cake, I think this particular icing would taste

good over this carrot cake recipe, has anyone tried this and how did it turn

out? I'd love to make a tall cake with 2 layers but who knows if I can pull

that off. will be 2 so mostly it will be guests, as family, may have 1 or

2 friends, so I'm not so concerned about it being a " kiddy cake " (she'll eat

anything that looks like a dessert!!) ;.) Any feedback on this recipe or any

other suggestions? Thanks,

CARROT CAKE [printable version]

Ingredients

6 eggs, separated

1 cup honey

1 1/2 cups carrots, cooked and pureed*

1 tablespoon grated orange rind

1 tablespoon frozen orange juice

3 cups almond flour

*The carrots should be cooked, pureed, and then measured.

Instructions

1. Preheat over to 325 F (165 C)

2. Beat the egg yolks and honey together. Mix in carrot puree, orange

rind, orange juice and almond flour.

3. Beat the egg whites until stiff and fold in.

4. Spoon into a greased loose bottomed 9 inch springform pan.

5. Bake for about 50 minutes or until a skewer inserted into the center of

the cake comes out clean.

6. Cool in the pan for 15 minutes, then turn out onto a wire rack to cool

completely.

Notes

This cake looks great , tastes wonderful alone but it is also very nice

served with the Honey Cream Whipped Topping (Page 110 , Breaking the Vicious

Cycle).

Substitute saccharin for honey and I emailed this in error to someone else who

had a cashew butter problem.

This is from Sue Krivel in Toronto on the adult UCLBS list. I've tasted it and

kept going back for more.

8-10 ounces of pear juice

Bring the pear juice to a boil and reduce until 2 Tablespoons remain. Watch

carefully as once it is almost reduced the juice can burn easily.

2 Tablespoons (2 envelopes) gelatin

1/2 cup water

4 egg yolks

1/2 cup honey

2 Tablespoons reduced pear juice

1 teaspoon vanilla

1 1/2 cup yogourt

1 cup creme freche (yogourt made with whipping cream)

Sprinkle the gelatin over the water, let soften and then heat to dissolve.

Beat the egg yolks and the honey until thick and light.

Add the pear juice. (If you are concerned about using raw eggs you may heat the

egg mixture using a double boiler; I don't.)

Add the vanilla and yogourt and then stir in the gelatin.

Beat the creme freche until it is stiff and fold into the yogourt mixture.

Pour mixture on top of the Date Cake.

Chill for at least 1 hour.

To serve: decorate the top with fruit and remove the sides of the spring form

pan.

I have never made that particular cake, but if you are looking for a

carrot cake that tastes like a regular one, try the one in BTVC. It

is a dense carrot cake that tastes similar to a spice cake. It is

dark in color and a fairly heavy cake, but very tasty.

Also there is another carrot cake recipe that is carrot/coconut

cake. That one turns out very similar to a yellow cake in flavor

and texture. Moist and light and fluffy. Doesn't taste at all like a

" carrot cake " , but is very yummy.

Either one would be good with the cream cheese frosting.
