A couple of weeks ago I tried to make macamia nut yoghurt, right

after I ordered & received them unsalted. The yoghurt failed in the

most terrible way. The fact that these macadamias do not seem to be

roased or raw, but rather deep fried (submerged in some kind of oil),

gives them a lot more taste, but leads to bad yoghurt results. It may

help if your macadamia is as untreated as possible.

If you find them, do try to make yoghurt. I'd be very curious.

If it works out, I may order the nuts untreated also and join you in

the macadamia party.

I tried with raw macademia nuts and it was a total failure.

I had a very pleasant talk with my nut supplier this weekend in

Amsterdam. He gave me some raw macadamias to run a test with yoghurt.

I assume it will work out in the most glorious way. OFF topic: he

supplies top restaurants and says that a couple of chefs are very

interested in the nut yoghurt recipe.
