Hi Marissa,

I use a fine rasp (I think it's a woodworking tool!) to grate my

parmigiano reggiano ($18 per lb!) and it works fabulously. I got it

at a specialty hardware store here in Canada. (Lee Valley)

Marissa there are little cylindrical grinders for shedding cheese and your

fingers are protected. They have a manual handle that you rotate. I found

several models here: Look under shredders and graters. You'll have to get past

the pepper mills to find the vheese graters.

Hi Marissa,

If grating a lot I put it through my food processor using the fine

blade. If I only need a little I use the hand held grater.

I think Elaine has said in the past that she buys pregrated parmesan

locally. I have seen some local grated stuff in the Deli section of

my grocery store (refrigerated) that says 100% parmesan no fillers

etc.
