Use a fork and scrape out the " noodles " . Looks like angel hair pasta. Top with spaghetti sauce. Cut the squash in half lengthwise. Scoop out seeds. Put about 1.2 inch of water in a shallow baking dish or pie plate. Place squash cut sides down and bake in 375-400 oven until tender. When you scoop out the cooked squash it will be stringy like spaghetti. Combine with SCD homemade tomato sauce and meat balls. Just sliced in half, scraped out seeds, placed open side down on cookie sheet with parchment paper and baked it. After it cools a little, scoop it out with a fork. You can have it with ghee (clarified butter) and later on, try it with homemade pesto (withought the parm cheese). Yummmmmm! Guest guest Posted May 5, 2004 Report Share Posted May 5, 2004 I cook Spaghetti Squash in the microwave (I have a pretty good recipe - Spaghetti Squash Straw and Hay - I think I could easily adapt for SCD). I place the whole squash in the microwave and cook on HIGH for about 10 minutes (if squash is small, cook for 5 minutes) - Then take it out and cut it lenghtwise, then take the seeds and membrane out (comes out much easier than when raw). Next step is cooking the halves (cut side up) with about 1/3 cup of water, and covered with vented plastic wrap for anoter 10-15 minutes on HIGH. Then let stand for a couple of minutes in the microwave so that it completes cooking. Be careful when you take it out, it will be very hot. Use a fork to see if the strands pull off easy, as it is " done " when they do. If you get the squash out carefully, you can use the shell as a container to serve the spaghetti meal!!!!
