Hi Dave, Rita and Sugar,

The reason sweet potatoes are preferred has to do with the glycemic index.

White potatoes have a glycemic index of something like 90 as memory serves

me and the sweet potato is somewhere around 75.

The higher the glycemic index the faster it dumps the sugar into your system

consequently the lower index foods will sorta spread out your absorption of

sugar and the better the chance your body has to process it.

If anyone really wants to know the numbers I will find my glycemic charts.

Hello Everyone, My understanding is that beans are starchy and so are sweet

potatoes. Yet I read that many diabetic folks eat these foods. I am

confused. Please explain. Also I want you each to know how much I admire

your dedication to good health and the example you all set. Thank you, Rita
