Regards, Fresh Herb Pesto This adds wonderful flavor to just about any dish, any meat or fish, pasta, pizza, and is wonderful in wraps! Fresh Herb Pesto Makes 4 servings Serving Size is 2 1/2 Tablespoons 3/4 cup fresh parsley leaves 1 ounce walnuts 3/4 cup fresh basil leaves 3 tablespoons low-sodium chicken broth 1 tablespoon fresh thyme leaves 1/2 teaspoon salt 1 tablespoon fresh lemon juice 1 garlic clove, quartered 1 teaspoon extra virgin olive oil 1/4 teaspoon freshly ground black pepper 1/2 ounce freshly grated Parmesan cheese In food processor or blender, combine parsley, basil, thyme, salt, garlic and pepper; pulse until very finely chopped. Add walnuts and process until nuts are finely chopped. With motor running, pour in chicken broth; process until mixture is smooth. Add juice, oil and cheese; process again until smooth. Cover and refrigerate until ready to use, up to 2 days. PER SERVING: Calories 88 Fat 7 g Carbohydrate 5 g Fiber 1 g Weight Watchers Points 2 You may vary the herbs/spices in pesto to make it suit your taste. Hope you will enjoy.
