Fresh zucchini doesn't need much fancy fixing, but it will respond well to it!

I like to cut it into small moon-shape pieces and steam it. If you don't

own a steamer basket (a little mesh basket that fits into a regular pot) it

is a great thing to get. You can also steam it by putting it into a pot

with about 1/4 " of boiling water and cook for a few minutes on low, or put

it into a plastic container with just a bit of water and zap in the

microwave for three minutes. Salt to taste.

You can also cut it into small pieces and sautee in just a few drops of

olive oil and garlic (use a non-stick pan so you don't need much oil, or

use cooking spray).

Or, stir fry it up with onions and mushrooms and peppers, maybe some tofu,

and/or put it into an omelet or scramble it with an egg, or drop it into

spaghetti sauce or even put it onto a pizza or into a grill cheese

sandwich... they're also great in soup, especially minestrone.

Some people like them shredded raw on top of salad. You can also add some

raw to cole slaw.

And of course, you can grill them too! Slice lengthwise. Brush with oil

and/or wrap in foil.

Or bake into muffins....

Zukes are very versatile!
