As for just starting the diet, we really recommend starting with the intro diet and adding new foods slowly. We realize that this is not possible for every child, but time has shown that the best results are gained by starting with the intro diet. As for the best way to grind nuts, I just think it depends on the equipment you have. Some people say their coffee grinders work better, while others say that their food processors do a better job. Once I have him used to the idea of the diet I can add and subtract things. Getting rid of sweets is the hardest part! I am going to suffer with my current food processor until I visit my inlaws this summer. My father in law has every kitchen appliance ever made. When I leave it in there longer - it makes nice creamy butter. I paid $79.99 for it new on Amazon.com but - listen to this... I found a very nice one - same size but better model with more gadgets at a garage sale yesterday for $12.50 Yes, you read correctly - $12.50. They had it marked for $25 and were tired of being outside NOT working in their garden, so they wanted to get rid of everything fast. Wow. That's the best purchase I've made in years. I bought what looked like a great Kitchen Aid on ebay a while back, but it didn't work when I got it. Bummer. I completely understand your doing it the way you are. I will say that a really easy recipe is the banana/peanutbutter pancakes. I recently took the banana out when told here it was good without it too. They are really really good. Try them out on him and see how it goes. Also the cashew butter muffins are wonderful.
