Re: Nut Milk -- go to www.pecanbread.com and look under the recipe section. There is a recipe called " Nut Milk " written by our resident nut milk expert, Marjan. It gives step by step instructions. About the meat -- there are lots of recipes (on Pecanbread) for things like " sneaky pancakes " -- where you puree the chicken in with the eggs and hopefully he won't even notice it's there. If he likes finely pureed veggies, you're in luck. You can use those after the intro diet. And finally, many, many parents find that their kids' tastes and sensory issues change after a while on the diet. My daughter now eats a few bites of vegetables every night at dinner (even though some days it seems like " Fear Factor for Four-Year-Olds " -- the dreaded PEAS!!!) and she would have preferred to starve (not kidding) pre SCD than eat a carrot. Water is really what he needs to be drinking. Our son had this addiction to chocolate milk before we went gfcf and then when we were gfcf he was addicted to chocolate Darifree. I was getting really concerned about his teeth. When we started SCD I just eliminated milk and juices from the refrigerator and he began using the water dispenser to get his own water and we also got a cool water bottle that is his he loves to keep with him. You can puree chicken and make pancakes and there are a lot of other great " hidden " veggie recipes on www.pecanbread.com there are a lot of links to other sites as well. I recall one I was thinking about making called " egg fu young pancakes " .(they had chicken in them as well). My daughter does not like to eat pork chops or chicken plain but will eat anything if it's in a pancake or in a meatloaf. It takes time to perfect what will work for you. Also eventually after the intro you will get to use nut butter, then nut flour and those have a lot of protein as well as eggs. Can he eat eggs? The banana pancakes are easy and kids like them. Basically its an egg and banana made into a pancake. The yogurt and dehydrated fruit comes later so I would concentrate on the instructions on the website and do the intro. then ease into stage one. There you will find answers to most of your questions and it is a wonderful resource that I go back to very often. In the recipe section, you will find recipes for both nut yogurt and nut milk. But, if you decide to do the intro diet, nuts are not to be introduced right away. Now, if he's not going to drink anything else, then I would go ahead and give it to him. Keeping a food journal is highly recommended and is really helpful, so you know if there are any adverse reactions. Also on pecanbread is a section called " Beyond the Intro. " There you will find a table for all the stages of the diet. This is a guideline for you, so you will have an idea which foods are usually well tolerated and the order on how to prepare the food. At first you will want to peel, deseed and cook most fruits and all vegetables. Dehydrated fruits are in the last stage, so you will not want to try this early on in the diet. Kirkman's protein powder is legal, but I think some children have been having difficulty with it, so I would just watch your son for any adverse reactions or little improvement on SCD. My son is also not a big meat eater. He also likes eggs and they are a great source of protein. Nut butter is also a great source. But maybe you could try sneaking some meat in. I know I can brown some ground beef and put it in Jack's veggies or in his eggs. Sometimes I grind up cooked chicken and put in mashed butternut squash. There is a recipe for chicken pancakes on pecanbread that is also popular with the other kids. Check out all the recipes, and you may find some that work for your son. " So if I were in your shoes I'd puree all foods initially to help him get started as comfortable as possible. " Can we try making almond milk " Of course, I make it all the time. I have to say that I don't do almond milk, I make it from hazelnuts. We give almond yoghurt already and I'd like to sort of rotate nuts where possible. Recipe: 100 grams = 1/2 cup of whole blanched hazelnuts, almonds or pecans (pecans give brownish, fatty milk) 1 litre = 4 cups of water a small pinch of salt optional: 1 tbsp of clear honey Put ingredients in blender and spin for about 10 minutes. Pour through a fine sieve. Squeeze out residue with the back of a spoon or squeeze out in a tea towel. Freeze residue (this is in fact very fine nut flour) and use for baking purposes. Store in the fridge. Use withing 2-3 days. This recipe can be found on www.pecanbread.com, under recipes, scroll down to nut yoghurt, nut milk etc " or is there one on the market he could have? When you buy your dehydrator, a booklet will help you along no doubt. Dehydrated fruits are not at all recommended till much later in the diet though. Initially your fruit should be peeled & cooked. Throw in the blender, whizz, you'll never know you did put it in. An excellent protein source by the way are mushrooms. They act as meat substitute in all kinds of recipes. So in autumn be sure to grab those mushrooms and dehydrate them for future use. You are correct the oat milk is illegal. Yogurt smoothies may be an option for you. I make a blender full each morning with yogurt bananas and honey. If you aren't going to use yogurt right away, you may be able to make a fruit " smoothie " some water/ice cubes and cooked fruit. Ripe Banana, applesauce/pearsauce and ice cubes blended until very smooth. The nut milks aren't really recomended for the beginning of the diet but if you have no other option.... Sorry to be the bearer of bad news but the pea protein is not legal. Conference they were handing out flyers for SCD Legal Supplements and pea protein powder was included in the list. This is very concerning.
