Sorry, I don't have the carb count, but it should be fairly low! Enjoy!

>Dad's Gingered Roast

>Ingredients:

>1 2 3/4-pound bottom round roast

>Salt, pepper and ground ginger

>1 large onion, peeled, cut in half and thinly sliced

>1 tsp. minced garlic (about 1 large clove)

>½ cup red wine

>¾ cup brewed tea

>12 pitted prunes

>1 cup drained pimiento-stuffed Spanish olives

>Procedure:

>1. Season the roast liberally with salt, pepper and

>ground ginger.

>2. Layer half of the sliced onions in the bottom of the

>ceramic vessel of your slow cooker.

>3. Add the roast, the remaining onions and remaining

>ingredients.

>4. Cover and cook on high for 4 to 6 hours or on low for

>6 to 8 hours.

>Makes 8 servings.
