It seems the time is right to fasten your seatbelts for some die-off, or maybe you're in the middle of it already. Snacks can be prepared in huge quantities. Last thing I bought was a french fries slicer. I put the carrots in and the kids munch carrots. Great tool. I have the freezer full of cookies and tiny omelettes. I give a boiled egg, I give some nuts (not in initial stages though), I give a glass of water, I give homemade applesauce (frozen and packed in small quantities). These foods I have made together with my sister in law, on a strategically planned scd cooking day. " He seems to be hypoglycemic when he hasn't eaten in an hour or two " Even after more than a year on scd, I make sure he gets bits and pieces of food every 1 1/2 hour. Even in school they have found out this works very well, otherwise he gets cranky. The simple sugars in the food are so fast, they don't last that long energy-wise. Or maybe I should hire someone to do it for me on the side from time to time. That would be great! I hope this " die off " passes soon. I am so grateful for this diet, but today I just wanted to have a temper tantrum and stomp my foot, and say that life is not fair with my bottom lip poked out! Ever had one of those days? Actually, I called my hubby at work and vented it all to him...very unwise! I just brought him down too. Well, I have a quiet moment now. They are both asleep. I should work on making something, but I just want to lie here and do nothing right now. Hope this helps someone to know that times do get hard, but it is worth it. Guest guest Posted April 21, 2004 Report Share Posted April 21, 2004 I work full-time so on the weekend I do alot of baking so I can have snacks on hand during the week. Some of what I bake is zucchini muffins, banana muffins, peanut butter cake (yes, as muffins too), cinnamon cookies (from Lucy's cookbook) and bread (for a quick PB & J using jam from Digestive Wellness or peanut butter, honey & banana sandwich). I make waffles and keep in the fridge to warm up in the toaster which can be topped with jam, peanut butter or honey butter. I also make thousand island dressing (again recipe from Lucy's cookbook) for dipping cucumbers and carrots. I keep an assortment of nuts on hand such as pistachios, cashews and almonds. I keep hard boiled eggs in the fridge which my kids like to eat whole, dipping in salt or like sliced with a little thousand island on it. One of the favorite snacks for my youngest two is banana slices with peanut butter between two (kinda like peanut butter crackers except using bananas instead of crackers) which they eat with a fork. I give them some fruit such as grapes, strawberries, apple slices, pear slices or kiwi but avoid giving too much. I also bake a couple meatloaves which I can slice for a quick pick-me-up. Some of my kids like it alone and others like it as a sandwich. Regarding the walnuts, avoid them but since you say pecans are fine I would think they would be OK. My mom is allergic to walnuts but can handle other nuts. I work full-time and am doing this diet along with the rest of my family. About twice a week someone brings Krispy Kreme donuts in as well as an assortment of other very illegal goodies. Christmas was a killer with all the Sees candies and other treats. I completely understand how difficult this diet is to do in social situations. It is unfortunate that those in your group is not supportive of you. Guest guest Posted April 21, 2004 Report Share Posted April 21, 2004 Oh, I just remembered more snacks I keep on hand. I make separate batches of jello with one white and one purple grape juice. Sometimes I cube it but for my youngest one, I use cookie cutters to make fun shapes. Since he can have diary I cut cheese in cubes or slice and use cookie cutters for cheese too. This weekend I just got some popsicle molds in preparation for the summer. I made one batch of popsicles using Welches grape juice and another batch using smoothies (frozen strawberries, bananas, yogurt & apple juice).
