Ronnie,

We never had anything fancy like french cut potatoes to put in the lard

kettle, we just sliced up the taters right thin. Cooking sliced potatoes in

hot grease or oil will also remove any unwanted flavors from its previous

use.

We also never had a lard press. We put the cracklin's in a big piece of

cheesecloth and two men twisted the cheesecloth as hard as they could to get

the lard out.

Never pinned a real pig tail on anyone. I did pin a sprig of mistletoe on

the seat of a co-worker's rain coat one December. He made about three stops

on his way home and it stayed on. His wife found it.

He had no sense of humor if it involved him. Thought he was going to open

up a can of whoop-ass on me for that one.
