The ingredients should have nothing more than milk, cream, rennet, microbial enzymes, salt and bacterial culture. It can have either rennet and or microbial enzymes - these both do the same thing. The cheese can have as little as milk, rennet (or microbial enzyme), salt and bacterial culture, and a lactose content of less than 1% to make it legal. Hope this helps.
