But this recipe I'm sending is OUTSTANDING, and worth saving for the next time you need it! Bette Zucchini Pancakes 1/3 cup Reduced-Fat Biscuit/Baking Mix (Bisquick) 1/4 cup grated Parmesan Cheese 1/8 tsp Pepper 2 Eggs, lightly beaten 2 cups shredded Zucchini 2 tbs Reduced-Fat Margarine In a bowl, combine the biscuit mix, parmesan cheese, pepper and eggs just until blended. Add the zucchini; mix well. In a large skillet, melt margarine. Drop batter by about 1/3 cupfuls into skillet; press lightly to flatten. Fry until golden brown, about 3 minutes on each side. Makes 5 pancakes. One Serving (one pancake) - 2.5 Points NOTE: I got 7 good-sized pancakes out of the above ingredients. That lowers the points slightly! These are yummy! ALSO . . . Slice the zucchini, and put on aluminum foil sprayed with butter flavor pam. Add some colorful peppers slices, onion, etc. I also sprayed the tops of the other veggies lightly. Wrap up in the foil and grill on the indirect heat for about 10-15 min. turning once. (If you want a little something extra,you can add a little shredded mozzarella cheese after removing from the grill while still hot.) It was a mixture of zucchini,(sliced and then slices were halved) strips of green (bell) pepper, and onion strips. It was sauteed until the veggies were just tender but still had a little crunch (slightly firm). Seasoned with salt and pepper. It was excellent! > > > > > Not sure if I spelled that right.
