steph,

I'm in California, so it's likely that I'm too late to help you. But this

recipe I'm sending is OUTSTANDING, and worth saving for the next time you need

it!

Bette

Zucchini Pancakes

1/3 cup Reduced-Fat Biscuit/Baking Mix (Bisquick)

1/4 cup grated Parmesan Cheese

1/8 tsp Pepper

2 Eggs, lightly beaten

2 cups shredded Zucchini

2 tbs Reduced-Fat Margarine

In a bowl, combine the biscuit mix, parmesan cheese, pepper and eggs just

until blended.

Add the zucchini; mix well.

In a large skillet, melt margarine.

Drop batter by about 1/3 cupfuls into skillet; press lightly to flatten.

Fry until golden brown, about 3 minutes on each side.

Makes 5 pancakes.

One Serving (one pancake) - 2.5 Points

NOTE: I got 7 good-sized pancakes out of the above ingredients. That lowers

the points slightly! These are yummy!

ALSO . . . I skipped the 2 tbs margarine and cooked mine in a light spray of

Butter Pam. Also a reduction in points.

Slice it thin length-wise, spray with oil spray, season with salt/pepper and

what ever herbs you like then throw it on the grill. When it comes off, you

can squeeze a little lemon onto it if you want. Yummy!

Thank you!

zucchini

Not sure if I spelled that right. Anyway, anyone have any good ideas

about how to fix it? I bought some but don't know what to do with it. I

am having grilled center cut pork chops tonight with grilled veggies but

I'm a little unsure about what to do with the zuchinni I bought. Ideas

appreciated, here or privately.

One way I do it is from a recipe I found on the web done weight

watchers way..

Slice the zucchini, and put on aluminum foil sprayed with butter

flavor pam. Add some colorful peppers slices, onion, etc. I also

sprayed the tops of the other veggies lightly. Wrap up in the foil

and grill on the indirect heat for about 10-15 min. turning once.

(If you want a little something extra, you can add a little shredded

mozzarella cheese after removing from the grill while still hot.)

Be sure to count the cheese if added as extra.

I had some this weekend that was sauteed with Pam. It was a mixture

of zucchini,(sliced and then slices were halved) strips of green

(bell) pepper, and onion strips. It was sauteed until the veggies

were just tender but still had a little crunch (slightly firm).

Seasoned with salt and pepper. It was excellent!

I slice up zucchini and yellow squash together, add chopped bell pepper and

onion and stew all until tender ... drain, and shake some Mrs. Dash (original

blend) on it ... squirt a few sprays of I Can't Believe Its Not Butter on it

.... and yummy! I don't count it as any points at all ... unless I go crazy with

the ICBINB! :)
