Hey ,

if you have an ice cream maker, it must have come with a recipe

booklet. With the book as a guide, you can experiment and sub the

ingredients. Leave out the chocolate things etc, you can judge that.

It does not need careful weighing or accurate amounts. Use your

blender. Just taste the mixture and when it's a little sweeter than

you like, pop it in the maker and spin for 20 minutes. Voila.

BUTTER PECAN ICE CREAM

1/2 cup honey

3 eggs

4 tablespoons soft melted butter

1 1/2 cups SCD yogurt

1 teaspoon vanilla extract (I always use more)

1 cup French Cream (SCD Legal see pg 134 BTVC)

3/4 cup pecans, broken into small pieces

1. Except for the pecans, blend all ingredients well and freeze in an ice

cream maker.

2. When ice cream is done (thick) stir in the pecans. (Freeze in a ziplock

container, one that is larger and flatter not small and tall--it decreases the

freezing time and makes it easier to scoop).

This is the best! I have an ice cream maker which helps in making this

cold and creamy (not rock hard). Try it and see, you will love it! I even forgot

the butter the last time I made it (darn it!) and it is still good!

My kids love this recipe for vanilla frozen yoghurt

3 cups SCD yoghurt from 2% cow's milk

1 cup honey

1.5 tbsp vanilla

Mix ingredients, put into icecream maker for 20-30 minutes. It is

very soft when first removing it from the ice cream maker, pour

into a tupperware and place in freezer overnight to firm up.

Variation: puree approx 2 cups strawberries(I cook mine first)

and add to vanilla mixture for awesome strawberry ice cream.

Good luck!
