Guest guest Posted April 6, 2004 Report Share Posted April 6, 2004 I tried every recipe I could find and they all either tasted like cardboard or stuck like crazy to the waffle iron. I came up with a recipe the whole family likes. If only your daughter is eating you might want to half it: BANANA WAFFLES 2 mashed bananas 8 eggs 1/4 cup honey 2 tsp. vanilla 1 tsp. salt 1/2 teaspoon baking soda 2 cups almond flour Beat eggs and mix in banana. Add honey & vanilla and beat until smooth. Add salt, baking soda and almond flour and mix well. Cook according to waffle iron directions. Feeds about 6. Freeze or put any extras in the fridge and toast to serve later. For syrup I melt butter and add honey and vanilla. Try topping them with banana or strawberry slices, chopped walnuts or pecans for a little variety. The sneaky pancake recipe on pecanbread.com can be made into waffles. You can make it with or wtihout the veggies. Do NOT open the waffle maker to peek until it indicates " done " . This is a good recipe for early in teh diet before you start using nut flours. 2. Later, the Midas Gold pancakes/waffles are the best! Look under recipes/pancakes on www.pecanbread.com. Find the MidasGold pancakes. You can make variations with either cinnamon or vanilla or crushed anise seeds. These will turn into the finest waffles in a waffle iron. Even the French waffle iron (they produce the thinnest, like crepes) works excellent! BUT they do not get crispy. Never.
