Here is the blurb formt he health food store I pruchase form:

Almond Flour can be used as a whole or part substitute for many other

flours in baking and cooking. The blanched variety simply means that the

skin of

the almond has been removed before being ground. This variety is popular in

texture.

The meal is a bit more coarse and the flour is more of a fine powder.
