Turnips

I saw turnips in the store - big ones, like grapefruit and small ones, like

oranges. Is there some tenderness factor with one vs the other? Looks like

the middle is a big stem - do you eat that part?

The turnips we have available here are more the size of tangerines. You can

use the whole turnip . . . there isn't a core, per se. The larger ones may

be a bit more fibrous, as in most vegetables.

I like to cut them in pieces and boil till soft, and mash them just as you

would potatoes. Don't put much cream in them though, because I find that they

are moister than a potato. Add butter, salt & pepper... yum yum!
