I get really confused by the 10% carb in vegies. Is a green salad

okay? What type of dressing is the best? Celery with Peanut Butter

is my favorite! What other vegies should I be eating on the intro

diet?

Lettuce, cucumber, tomato in moderation is okay, green beans, spinach...green veggies mostly. Check the USDA website for carb counts to see if your favorite veggies are low carb: http://www.nal.usda.gov/fnic/cgi-bin/nut_search.pl . I often have salads with lettuce, cucumber, some shredded cheese, a little onion and maybe a few other things that happen to be on the salad bar. Ranch and Italian are generally the lowest carb dressings, but you have to read the labels because every brand varies. Personally I can't give up my French so I use Henri's French which has 5g per 2 tablespoons. It's not the lowest in carbs but it makes my salads palatable.

My favorite is 1000 island and I didn't give it up the first time around

and had no problem. If I want to watch the carbs in the dressing I'll mix

it 1/2 and 1/2 with mayonnaise, I still get my 1000 island taste with 1/2

the carbs.
