Guest guest Posted April 17, 2007 Report Share Posted April 17, 2007 EASY ITALIAN FISH SOUP Yield: 4 servings Source: " 1,001 Delicious Recipes for People with Diabetes " Info: http://diabeticgourmet.com/book_archive/details/26.shtml INGREDIENTS - 1 large onion, chopped - 1 large rib celery, chopped - 1/2 teaspoon minced garlic - 1 tablespoon olive oil - 1 can (14-1/2 ounces) reduced-sodium diced tomatoes, undrained - 1 bottle (8 ounces) clam juice - 1/4 cup dry white wine or clam juice - 1/4 cup plus 2 tablespoons chopped parsley, divided - 1/4 teaspoon dried marjoram leaves - 1 pound halibut steaks or other lean, firm fish, cut into 1-inch pieces - Salt and pepper, to taste DIRECTIONS Saute onion, celery, and garlic in oil in large saucepan over medium heat until tender and lightly browned, about 5 minutes. Stir in tomatoes and liquid, clam juice, wine, 1/4 cup parsley, and marjoram. Heat to boiling; reduce heat and simmer, uncovered, 20 minutes. Add halibut; simmer 3 to 5 minutes longer, until fish is tender and flakes with a fork. Season to taste with salt and pepper. Sprinkle with remaining 2 tablespoons parsley.
