Here is the recipe for the pumpkin cheesecake I made.

PUMPKIN CHEESECAKE

8 servings

3 eggs

8 oz. cream cheese

8 packets artificial sweetener (I used 12 packets of Splenda)

1/3 tsp. vanilla, nut & butter extract *

1/3 tsp. maple extract *

1/3 tsp. vanilla extract

1/2 can pumpkin

2 tsp. cinnamon

1 tsp. ginger

1/2 tsp. nutmeg

1/4 tsp. salt

Blend all ingredients together in a blender and pour into a 9 " glass pie

plate. Bake at 375 degrees for 30 min. or until it tests done.

* If you do not have these extracts you can use 1 tsp. vanilla extract for

the recipe.

Per serving:

Calories: 139

Total Fat: 12 g.

Carbs: 4 g.

Dietary Fiber: .4 g.

Protein: 4.9 g.
